Italian peasants used grits going back to the 15th century in Italy, as did enslaved African cooks inthe Southern US. After the ravages of the Civil War, Southerners relied on grits when little else was available to eat. Today, grits are still central to the cuisine of the South and Northern Italy, where they are called rustic polenta.
We freshly grind our Certified Organic Heirloom Grits on a stone mill to retain its superior flavor and nutrition. Corn is also a good source of vitamin C and manganese. We never use GMO varieties, as is required to be Certified Organic.
