Ingredients
- 1 ¾ cup spelt flour
- 3 Tbsp. melted butter
- ½ Tbsp. apple cider vinegar
- 1 Tbsp. honey
- ⅛ tsp. vanilla
- ¼ tsp. paprika
- ⅛ tsp. garlic powder
- ½ cup water
- ½ tsp. baking soda
- ¼ tsp. sea salt
Method
- Add everything BUT the spelt flour to the water, mixing well
- Add spelt to the water and mix well to fully incorporate all ingredients
- Cover and let rest on the counter for approximately 12 hours
- After soaking is complete, heat oven to 375°
- Sprinkle flour on work surface, form dough into a ball and flatten
- Sprinkle evenly with baking soda & sea salt
- Fold and knead to incorporate soda & salt, & add just enough flour as you go so dough is not sticky (probably about ¼ to ½ cup)
- Divide dough into 3 equal parts
- Use a rolling pin to roll each ball out to make a thin sheet, dusting the top as you
- Sprinkle with your favorite toppings and incorporate by running rolling pin over the top
- Cut with a pizza cutter into small squares and transfer with a metal spatula to an ungreased baking sheet
- Baking times really depend on your oven and you will have to watch and take notes the first time you make this recipe for specifics on your oven
- Try 8-10 minutes on one side, turning them over when they start to lightly brown and crisp up
- These crackers will puff slightly during the initial baking
- Bake another 5 minutes or so on the second side, being careful not to burn them
